We are flat broke, so I have been cooking with what's in the pantry and freezer.
I've been doing some baking with a big container of applesauce I made last fall and froze.
I made a loaf of applesauce-oatmeal bread last weekend (just okay) and a pan of buttermilk applesauce snack cake last night (spectacular). That snack cake would be even more fabulous with cream cheese icing.
I also made some buttermilk banana muffins using some powdered buttermilk (of which I have lots) and two black bananas, plus the last of the cake flour.
I have a small bag of self-rising flour and either tonight or tomorrow I am going to make garlic-cheddar drop biscuits (recipe on back of bag) with some lentil soup from the freezer.
In reviewing previous blog entries I saw that I raved about fresh pumpkin. Can't wait til those start showing up in the stores - fresh baked pumpkin is CHEAP and so yummy.
Damn, we're in a tight spot. I've been surfing frugal living sites, trying to get in the frugality mindset. I've also got some personal finance books on hold at the library. If we can't increase our income, we've got to decrease our expenses.
What I've eaten today:
two bites of snack cake, three fried eggs with parmesan & a slice of turkey, a peach (the peaches have been awesome this summer), a cup of coffee and now an iced coffee w/half & half.
Lee is coming home for lunch so that I can go to the chiro. He is going to finish off the pasta, bread & hopefully a cucumber. Not sure what I'll have for lunch. Boys are going to have the roasted red pepper soup and probably a sandwich or hot dog.
